The Science Behind Non-Stick Cookware

Most non-stick cookware uses a thin Teflon coating on the cooking surface, the trade name for polytetrafluoroethylene, or PTFE. More recently, due to potential health concerns, PTFE is often replaced with another type of fluoropolymer.

Whichever substance is used (although Gotham Steel Pans are also claimed to be PFOA and PFOS-free), non-stick coatings work their magic by preventing your food and the pan from bonding at a molecular level, which they normally would under such high-heat conditions.

Approved Heating Sources for Non-Stick Cookware

While you’ll always want to check with your stove’s manufacturer about the types of cookware that can be used with it, titanium non-stick cookware is generally thought to be acceptable for ceramic and gas burners.

On the other hand, DoItYourself.com recommends avoiding using titanium cookware on electric stoves, since it “conducts heat too quickly and can cause the thermostat in the burner to shut down too early or damage it.” Again though, this might be manufacturer-specific, so when it doubt, check your user manual.

Finally, using titanium cookware like Gotham Steel Pans on an induction cooktop might be a bit of a crapshoot. Why? Because, in order for a pan to be effective on an induction cooktop, the bottom must be made of a ferrous (i.e. magnetic and consisting of iron) material. And unfortunately, titanium is a non-ferrous metal; unless Gotham’s manufacturer has included iron in the bottom and not advertised this fact.

Ferrous or not, a lot of people are worried about chemicals contained in non-stick surfaces. With this in mind, how easy is it to damage Gotham Steel Pans’ non-stick coating?

Is Gotham Steel Pans’ Non-Stick Coating Indestructible?

When Chef Daniel Green started whisking eggs with an electric mixer inside his Gotham Steel Pans, you might have cringed. You’re never supposed to do that to non-stick pans, right?

Right! If you want your non-stick pans to last as long as possible, you should avoid touching the surface with sharp or abrasive objects, like metal utensils or cookware (spatulas, etc.), as well as steel wool.

Will you be able to tell a difference after doing it just one time (like Chef Green)? Probably not. But it’s certainly not something you’d want to do on a regular basis, despite how the Gotham Steel Pans commercial might have made it seem.

Pro tip: Most professionals also recommend that you avoid putting non-stick cookware in the dishwasher, despite what’s claimed in the Gotham Steel Pans commercial.

Who is Chef Daniel Green, anyway?

Will Gotham Steel Pans Make Cooking Easy?

If you’re going from a traditional pan to a non-stick one like Gotham Steel Pan, will it make cooking easier? Probably so.

Does this mean you’ll instantly be whipping up healthy, delicious, chef-inspired meals? Unless you have years of experience (in which case you’d already owned a professional non-stick pan), almost certainly not.

Regardless of your cooking experience, the key here is that there doesn’t appear to be anything special about Gotham Steel Pans that you wouldn’t also find priced similarly elsewhere online (or even less), or at a retailer near you. And despite its name, it appears the only steel contained in the pan is its handle.

    These pans are absolutely my favorite. I only bought one and have used it for six months, and I am so happy that I’m going to purchase a full set. Donate my old ones to the food basket. I can literally use this one pan multiple times cooking a meal quickly and perfect temp across the entire surface, clean in seconds and back on the stove for the next portion. Awesome!

    Gotham Steel at 400 RETURNS Road, Wallingford, CT is really Fosdick Fulfillment Corporation (a miniature Amazon knock off) at 26 Barnes Industrial Park N, Wallingford, CT 06492.

    Now, the cookware is ok, and if you want aluminum, it is great. I specifically wanted GOTHAM STEEL stainless titanium 1806D, which this is not.

    So far, no fault. Began to check out returns and reorder the good stuff, hopefully with this same supplier. NOT!

    Can only return to the fake address above and you will be charged for shipping and you might get a refund after 30-60 days.

    Just be careful with this supplier!

    Bottom Line: No, I would not recommend this to a friend

    It worked for 3 days until food started sticking to the pan, each time it was used it got worse. Definitely not as advertised, poor quality, just not worth the investment. Do yourself a favor and don't waste your money on this product.

    I am so unhappy with my Gotham Steel Pans, they scratch easier than most pans.

    I bought two frying pans and one pot with the top that closes for draining. I used my mixer to do mashed potatoes in the pot like advertised...the side and bottom of the pot are now so scratched I do not want to use it again because of the coating that might get into my food. The two pans I bought also are so scratched I cannot use them. They are so much worse than any other pan I have used for scratching! I have many pictures, but unfortunately, there's no place to insert them.

    Don't waste your money...this is a scam.

    Non-stick for ONE MONTH!

    I bought the Gotham Steel Pan on November 17, 2018. Washed ONLY with a cloth and soap. Never put in the dishwasher (despite the fact that it is supposed to be safe to do so). Used ONLY rubber spatula. By the end of December 2018, everything was sticking to the pan. Left burn marks which would not come out. VERY false advertising. Would NEVER purchase again. Shame on you.

    Bottom Line: No, I would not recommend this to a friend

    Worst pots and pans I have ever bought. Two weeks after I bought them food started sticking, hard to clean, the coloring started coming off. Nicks and scratches. Waste of money, wish I had read reviews before I bought. My cheap pans work better than these pans. Would not recommend to anyone!

    This product DID NOT meet my expectations!

    This POS is a waste of money. It will scratch and food will stick. It only took about 3 days for food to stick. It scratched right away. I want my hard-earned money back!

    Heck no to recommending this scam of a product. I wish I could share a photo so others can see how this product has failed to meet my expectations.

    not as advertised

    I purchased my Gotham Steel (took advantage of the buy one get one) and received them in December 2018. I first used the pan I kept (gave the other one to my son) to cook fresh tortillas a few weeks ago. After the first tortilla stuck to the pan, I subsequently started using nonstick cooking spray - and the spray itself is now permanently stuck to the pan. I have tried soaking overnight, to no avail. I still use it, but EVERYTHING sticks on it - egg, meat I am trying to brown, EVERYTHING. I am happy to send a picture of it, but I've currently got it soaking to get rid of last night's stir fry remnants that are stuck on it.

    Trying to find out how I can get my money back. This has been a total waste of money, and now time spent trying to clean it up to be useable. I want to return the pan so that the manufacturer can see for themselves how bad the pan they sent me truly is. I subsequently went out and bought two copper frying pans from Target and they are just fine and don't stick at all for the same uses. It was only this product that failed to work as advertised.

    Pan survived the CA "Camp Fire"

    One of the Gotham frying pans I purchased (two for price of one) was given to a friend who wanted to try it. Several days later, the largest wildfire in CA history struck our town of Paradise, CA and decimated most of the homes, including the one of my friend. Yesterday, I went by my friend's trailer (yes, we are all living in trailers) to give her my other pan and discovered they had located the pan in the debris. The outside was now white and the inside looked like it had sand stuck to it. Upon cleaning it up, the inside returned to the original slick surface but the outside remained white. I tried to reach Gotham Steel to let them know, but no phone number I called would let me through.

    Just thought the world would like to know the pans are made to withstand incredible heat!

    Bottom Line: Yes, I would recommend this to a friend

    After watching the infomercial I bought the 24" frying pan. I was and am extremely disappointed with the product. I read and followed the instructions that came with it. The first time I used it I cooked eggs. The ad showed the eggs sliding around the pan effortlessly. That didn't happen. They instantly stuck to the pan. I tried all types of food in the pan too. All of them stuck! This is a scam! Do not waste your money!

    After a short while, the pans are useless. Everything sticks even if you never used oil or any scratchy material. Worth only throwing away. They are not interested in warranty, I did speak to them but they asked if wanted other products and would not listen to the complaint.
