    Copper Chef Cookware

    I like it but it is fragile.

    Overall Experience:

    My first experience with these copper-type pans was when a couple came with my induction cooker. They were great for a while and then mostly lost their non-stick quality. That was several years ago. I bought this one hoping they had resolved the issue. So far, I'm not having the problem and I've had it for several months. I didn't see, however, that I wasn't supposed to use extra virgin olive oil, because the recipes call for it and I use it all the time. I haven't had any problems because of it so far. I saw not to use sprays, but that's something I find frequently, and I don't use them anyway. I got mine on Amazon and it came with a couple of scratches. Amazon exchanged it immediately. I use this pan a lot, it makes a killer roast chicken and does fried chicken really well. So far, so good for me. My food has come out juicy and flavorful. I've also used it for searing meat before it goes out to the grill and it does a great job. I don't put my pans in the dishwasher ever, so I can't report as to whether it holds up to that. I have forgotten it on the stove, so I can tell you that it takes high temperatures well. I'm not sorry I made this purchase. It won't replace my other cookware, but it does have its place and what I've used it for, it's performed great.
